Vegan Pastry III – Mastering Chocolate

During this class you will submerge yourself in the world of chocolate learning everything from the origins of the mysterious cacao bean and to the crafting of fine chocolate bonbon.

Five intense days from the introduction about what chocolate is made of and the different varieties of cocoa beans and how to choose your beans or chocolate, all about the making of various ganache and glazes, filled bonbon, chocolate decor and some classic French pastries done in original chocolate versions.

There will be an exclusive visit to a chocolate workshop to give students a feel of a professional chocolate enterprise.
