Apples in French Pastry

From the tarte tatin , the upside-down caramelized apple tart to the tarte normande, or Normandy tarte with its creamy, custardy bottom just cradling sweet slices of apple to green apple and calvados sorbet , France has always known, with its hundreds of heritage apple varieties, how to create incredible apple desserts.

In our Introduction to Vegan Pastry class, we learn how to make a perfect tarte tatin , which when served warm, with a scoop of our homemade vanilla or cinnamon ice cream becomes the ultimate French country dessert. What are the secrets to a good tatin? It is in knowing the fruit you are using to know how much juice it has, how sweet it is  ( in order to rectify the sugar you add for caramelization) and how firm the fuit is to know just how long to bake it.
